•31 kinds of glucosinolate were identified in FCCP via widely targeted metabolomics.•36 aroma-active were quantitated in two treatment FCCP.•5-Hexenenitrile and (methyldisulfanyl)methan provide typical pungent, sulfous and vegetable notes.•Increased temperature promotes the degradation of GSLs.
