S-nitrosylation of superoxide dismutase and catalase involved in promotion of fruit resistance to chilling stress: A case study on Ziziphus jujube Mill.

Chilling stress is typical abiotic stress that threatens the morphological and quality performance of postharvest fruit and vegetables. S-nitrosylation of antioxidant proteins plays vital role in quality regulation and mechanism of jujube (Ziziphus jujube Mill.) fruit in resistence to chilling stress. Herein, we investigated the quality attributes of jujube fruit, and analyzed the differentially abundant proteins and S-nitrosylated proteins, in relation to exogenous nitric oxide (NO) signaling and chilling stress. Our data indicated that 5836 differentially expressed proteins, 1045 S-nitrosylated proteins and 1653 S-nitrosylated sites in response to chilling stress stimuli. And the function annotation and protein-protein interaction network analysis were carried out. Results demonstrated that the exogenous NO relieved chilling injury by maintaining cellular redox homeostasis through the presence of S-nitrosylation of superoxide dismutase and catalase. The present work provides valuable resources on the elucidation of the important role of S-nitrosylated proteins in resistance to environmental stress stimuli.
