•The optimal process for extracting vicilin with allergenicity was obtained.•Enzymatic hydrolysis with Alclase could reduce the allergenicity of vicilin.•Enzymatic hydrolysis degraded vicilin and change the epitope structures.•Enzymatic hydrolysis inhibited the binding of linear epitopes to specific IgE.
