The eggshell is of fundamental importance for the conservation and internal quality. Therefore, the objective was to evaluate the quality of chicken eggs submitted to surface treatment of the shell, by immersion in geopropolis solution, stored at room temperature and refrigerated, analyzed. on the 5th and 20th day of storage. One hundred and twenty brown COBB MX eggs were used. A completely randomized design (DIC) with a 3x2x2 factorial scheme was used, corresponding to three treatments (unwashed eggs, washed eggs and eggs washed and dipped in 10% geopropolis solution) subjected to two storage temperatures (refrigerated and room) and two evaluation days (5th and 20th storage days) with 10 repetitions. The 10% geopropolis solution corresponded to 90% ethanol and 10% propolis. The value of Haugh Unit (UH) on the 5th and 20th day of storage was evaluated. In the eggs evaluation on the 5th and 20th day of storage, a difference (P <0.05) was observed between the shell treatments for UH. Under the conditions since experiment it is concluded that the geopropolis solution applied in the eggshell confers less UH loss during the storage period and contributes to the conservation of the quality of eggs stored under refrigeration.
