•Cutting resulted in sucrose decomposition in melon fruit.•Sucrose metabolism in fresh-cut melon was mainly regulated by AI, NI and SS-c.•Storing fruit at 5 °C maintained high content of sucrose and organic acids.•Cutting and storage temperature altered the expression of genes in melon fruit.
