•Histamine producer isolates were obtained from cheese.•The identity of the isolates was investigated with molecular biology techniques.•The potential of histamine production was tested under different conditions.•Classification proposed for histamine producers based on amino-compound profile.•Pediococcus pentosaceus reported for the first time as histamine producer in cheese.
