•ABA and/or pyrabactin applications double vitamin C contents on ripe fruits.•ABA/pyrabactin modify vitamin C redox state during fruit development and ripening.•ABA/pyrabactin applications do not affect anthocyanin, carotenoids or vitamin E contents.•Pyrabactin, but not ABA, reduces protein content on ripe fruits.
