Prospect of Sonochemical Approach for Stable Fucoidan Encapsulated Water in Oil in Water Double Emulsion: Part 1 W1/O Phase Stabilization

. Fucoidan is sulfonated polysaccharide from brown algae has shown antioxidant and other biological properties. Our aim was to encapsulate Fucoidan in W1/O phase emulsion using sonochemical approach. Different concentration Fucoidan (0.25-2%) was encapsulated in water-oil phase and stabilize with different concentration of Polyglycerol polyricinoleate (PGPR). Later higher concentration of PGPR based found to be effective inner surfactant than lower with help of ultrasound. The particle size encap-sulation of Fucoidan in W1/O phase with spherical in shape as water soluble polysaccharide surround by oil droplet is range from 180-220 nm. The gravitational stability for W1/O phase containing higher con-centration shows 45 days stable with average particle size change to little 350 nm from 300 nm ( fresh sample). Later in second part we will incorporate this phase 1 in water phase to synthesis double emul-sion and there further study.
