摘要
Microencapsulation is a process in which solids, liquids or even gases can be enclosed in microscopic particles. This technique protects substances against adverse chemical and environmental reactions and also controls their release. In this study, we performed the microencapsulation of hesperidin in galactomannan and characterized the microparticles using scanning electron microscopy (SEM), X-ray diffraction (XRD), Thermogravimetric analyses (TGA) and Fourier-transform infrared (FTIR) spectroscopy. The microencapsulation process was carried out by spray drying, resulting in microparticles with regular morphology, average particle size and encapsulation efficiencies of 82% (with surfactant) and 53% (without surfactant). Thermogravimetric analysis showed a small difference in the thermal stability of galactomannan before and after incorporation of hesperidin. Galactomannan protected hesperidin by inhibiting its DPPH free radical scavenging effect.
