Review of electronic nose applied to Chinese liquor and tea.

Electronic noses have been among the most rapid gas analysis and detection technology developments in the past decade. It has been gradually applied in biomedical, environmental monitoring, agricultural production, food testing, and other fields. The electronic nose translates information about the odour component to be measured into a set of measurable physical signals related to time, composition and concentration. The digital signal containing the characteristic information of the gas is to be measured as output by the signal acquisition system. The comprehensive odour information and hidden characteristics of the gas to be measured are obtained by the pattern recognition system analysis, which enables the rapid, systematic and accurate identification and analysis of the gas. This paper reviews the types of sensors commonly used in the electronic nose and the application of pattern recognition in Chinese liquor and tea.
