This chapter covers the latest data on the composition of proteins, peptides, and amino acids from macroalgae and microalgae. The specific chemical and physicochemical procedures for protein and amino acid assessment are described. Information on the variability in the contents and activities caused by seasonal and environmental factors is discussed. Furthermore, the biological activities and the potential applications to be used as functional food ingredients are also presented.
