•Released Zn amounts in the small intestine differ among food groups.•Cooking of vegetal foods raised the Zn bioaccesibility (Zn-BA) in small intestine.•Zn-BA in the large intestine varies by adults and children’s idiosyncrasy.•Zn-BA in the large intestine is higher for children by growth and colonic microbiota.•The positive influence of fermenting plant foods on the Zn-BA is underestimated.
