•Urospermum picroides, a wild edible Mediterranean plant, has a rich and diverse metabolome.•77 phytoconstituents, including sesquiterpenes and polyphenols were identified.•12 unique sesquiterpenes amino acid conjugates are reported for the first time.•U. picroides extract was non cytotoxic in non-malignant cell lines.•In vitro assays suggest its suitability as a functional food with anti-inflammatory properties.
