Encapsulation of antioxidant beta-carotene by cyclodextrin complex electrospun nanofibers: Solubilization and stabilization of beta-carotene by cyclodextrins

•Polymer-free electrospun of β-carotene/cyclodextrin(CD) complex nanofibers produced.•The electrospinning of β-carotene/CD could be performed in aqueous medium.•Beadless nanofibers could be produced by tuning the β-carotene and CD ratios.•Unlike HP-β-CD, single β-carotene molecule could complex with two HP-γ-CD molecules.•CD complexes could maintain the antioxidant activity of β-carotene after UV exposure.
