A literature search using the keywords: fouling, cleaning, ESL, heat stability, pasteurisation, ESL sterilisation, UHT and evaporation revealed over 200 titles and was used to produce a list of potential papers. Those selected were based on my familiarity with many of these papers and the number of times they have been cited by other workers.
