•Effects of 14 HNDES on lycopene degradation and Z-isomerization were studied.•Lycopene in HNDES composed of thymol and menthol (TM) exhibited low degradation.•The addition of AITC and DADS into TM promoted lycopene Z-isomerization.•The addition of capric acid into TM promoted lycopene extraction.
