摘要
•Phenolic profiles of proso millet were modified substantially through germination.•Feruloylquinic acid and N,N′-bis-(p-coumaroyl) putrescine were firstly identified.•Germination significantly improved antioxidant activity of proso millet.•Germinated proso millets could serve as healthy ingredients in various foods.
