•The growth kinetic process of Au@Cu2O nanostructures is controlled by employing three different surface ligands.•The morphologies of Au@Cu2O nanostructures are modulated by using different surface ligands.•The stability of Au@Cu2O core-shell NPs is in the following order: Au@Cu2O-PAA > Au@Cu2O-CTAB > Au@Cu2O-SDS.
