摘要
•Energy-divergent (EDU) and gathered ultrasound (EGU) were used.•EDU and EGU significantly increased recovery of potato protein hydrolysates.•EDU and EGU increased molecular weight <1 and 1–2 kDa peptides.•Molecular weight 1–2 kDa peptides by EGU had the highest antioxidant activity.•Structure-antioxidant activity relationship of identified peptides was revealed.
