摘要
•The grape lipidome includes a wide range of species that goes far beyond traditional classes.•Approximately 300 lipid species covering 26 lipid classes were identified in grape samples.•Annotated lipids were complex lipids, mainly (lyso)glycerophospholipids and glycerolipids.•The most common fatty acyl chains were C16:0, C18:1, C18:2 and C18:3.•The lipidomic profile of grapes evolves during ripening.
