•The strong hydrolysis of BSA by pepsin resulted in SQ fluorescence quenching.•This BSA-SQ assembly probe is simple in operation and fast in detection.•This fluorescence probe has a good selectivity and sensitivity.•This probe was successfully applied to the detection of salivary pepsin.
