•Antioxidants may act as polymerization inhibitors of resin formulations.•Incorporation of quercetin increased the yellowing index of the resin blend.•Incorporation of Gallic acid may reduce the mechanical strength of the resin.•Ascorbic acid did not function as a polymerization inhibitor.
