摘要
•Effects of SMF on four kinds of foods were compared from micro and macro scales.•SMF tended to decrease the ice crystals size for four kinds of fruits and vegetables.•Higher SMF intensity did not always produce smaller ice crystals.•Significant effect of SMF on macro-scale quality only appeared in one kind of food.
