摘要
•A stable oleogel-in-water gel system was constructed.•When hemp seed protein isolate concentration was 8%, gel system had good stability.•The retention rate of Δ9-tetrahydrocannabinol in the gel was enhanced.•After 30 days of storage, the peroxide value of the gel was 4.98 mmol/kg.
