摘要
•10-Catechyl-PACNs showed impressive heat stability, retaining color and pigment.•PACN retained at least 90 % of absorbance and 70 % PACN after 4.5 hr heating at 90 °C.•ACNs degraded quickly with heat, with Cy-3-glu being the most stable.•ACN and corresponding PACN formed the same B-ring derived degradation compounds.•Degradation of 10-catechyl-PACNs formed a colored product, λmax 478 nm, m/z 315.
