Fabrication of Fucoxanthin/2-Hydroxypropyl-β-Cyclodextrin Inclusion Complex Assisted by Ultrasound Procedure to Enhance Aqueous Solubility, Stability and Antitumor Effect of Fucoxanthin

•Fucoxanthin (Fx)/2-HP-β-CD inclusion complex was prepared assisted by ultrasonication.•Fx and 2-HP-β-CD formed inclusion complex with a molar ratio of 1:2.•The solubility and the chemical stability of Fx was enhanced due to the formation of inclusion complex.•Fx/2-HP-β-CD inclusion complex significantly suppressed the viability of HCT116 and Caco-2 cell lines.
