摘要

•High temperature, acid, alkali, Fe3+, and ultraviolet radiation greatly affected the stability of gardenia yellow pigment (GYP).•GYP exhibited good antioxidant properties.•The immunomodulatory activity of GYP in RAW264.7 cells were confirmed.•GYP can be developed as a potential antioxidant and immunomodulator in functional foods.
