•The reaction mechanism of multi-component kitchen waste was elucidated.•A kinetic model of hydrothermal carbonization based on components was proposed.•The rate of the amidation reaction was faster than that of the Maillard reaction.•The carbonization of carbohydrates generated almost all the gas.
