摘要
•The chalkiness level of Sake rice grain was explored from Visible (VIS) to Near-Infrared (NIR) region.•A machine vision system was developed to extract gray intensities of white core kernel in transmission mode.•Higher correlation was found in NIR region to assess the chalkiness Index of Sake rice.•The system allows for robust Chalkiness index of white core’s sake rice non-destructively.
