•Carbon structure transformation at different stages of coke formation was studied.•Coal rank and maceral composition greatly influenced the degree of carbon ordering in coke.•Formation of oxygen-bearing crosslinks led to the isotropy of coke carbon structure.•A continuous conversion of C–H and C-O to C–C bonds with temperature was evident.
