Effects of Jerusalem artichoke on the growth of Lactobacillus bulgaricus and Streptococcus thermophilu

In this paper, Jerusalem artichoke (JA) powder was used as material and Lactobacillus bulgaricus and Streptococcus thermophilu were used as experimental strains. The effects of Jerusalem artichoke on the growth of L. bulgaricus and S. thermophilu were studied. The results showed, adding Jerusalem artichoke to milk could shorten the time of milk-solidifying, Jerusalem artichoke couldn't restrain the growth of S. thermophilu and L. bulgaricus, adding Jerusalem artichoke (0.6%) could significantly promote the growth of L. bulgaricus.
