The Gustatory System in Insects

Insect taste receptors are cuticular structures housing 1–4 gustatory neurons and one mechanoreceptor. The anatomy and localization of these structures is described as well at their molecular physiology. We review how taste neurons encode chemicals presented alone or in mixtures. These issues are illustrated by taking examples from Drosophila and other insects.
