•Nutritional properties of orange juice changes after plasma treatment.•Increase in content of cationic fraction of Mg, Mn, Sr, Zn (by 5 to 41%) was noted.•Increase in content of residual fraction of Ca, Cu, Fe (by 30–95%) was observed.•Shelf life of plasma-treated orange juice is higher than 26 days.•Plasma-treated orange juice is safe-to-consume.
