摘要

•Stability of TPC-W and TPC-A aqueous solution treated at 300 and 500 MPa was enhanced.•CD results revealed that UHP led to the steric structure of TPC-W and TPC-A to unfold.•One component of TPC-A treated at 300 and 500 MPa was dissociate into two.•The zeta potential absolute values of UHP treated TPC-W and TPC-W were increased.
