摘要
•Meat from small ruminants in Spain is obtained mainly from suckling kids and lambs and light lambs.•The leg and shoulder have less fat content than the loin + rack.•Small ruminants’ meat is high in protein, zinc, pyridoxine and cyanocobalamin and low in sodium.•This meat can be claimed as a source of selenium, phosphorus, potassium and niacin.
