Sodium alginate is widely used in pharmaceutical, biomedical, cosmetic and food areas due to a number of beneficial properties. First of all, it is non-toxic, non-carcinogenic, does not cause allergic reaction and is compatible with biological systems. The paper presents the influence of concentration and temperature on the rheological properties of aqueous solutions of sodium alginate. Knowledge of rheological properties allows appropriate selection of raw materials and a technological process, which is important during the creation of the new product.
