•AuNPs aggregates could be rapidly formed based on charge neutralization.•The electrostatic repulsion between AuNP aggregates prevents further aggregation.•The strategy eliminates the instability of salt-induced AuNPs aggregates.•A label-free dual-channel sensing strategy was applied to detect zearalenone.
