摘要
•Raw PM and its processed products had been successfully distinguished by using electronic tongue for the first time.•Taste indicators and chemical composition of PM were certainly associated for the first time.•The modern scientific interpretation of PM prepared with NCSS was preliminarily elucidated.•A bridge between the "five flavors" theory and the material basis of PM was built for the first time successfully.
