•The properties of resveratrol (Res) in peanut oil (PO) were studied for the first time.•Res can be properly solubilised in PO.•Res enhances physicochemical and compositional parameters of PO.•Addition of Res to PO increases the essential linolenic acid content.•Res improves oxidative and thermal stability of PO.
