•Positive sensory descriptors are negatively associated with nutritional value of meat.•CLA and MUFA trans proportions are positively associated with greasy feel and residues.•PUFA proportions are positively associated with carcass weight and rancid/fish flavors.•The relationships established here are robust and therefore generalizable.
