•LCFHS variety had high CA and antioxidant activity than RHSF.•HS variety could be used for CA extraction.•Significant SSF conditions for CA extraction from HS were IT and IS.•Extraction model was adequate, precise and acceptable.•Optimized SSF conditions changed LCFHS’ structure affirmed by AFM, FTIR and SEM.
