Influence of O/W emulsion interfacial ionic membranes on the encapsulation efficiency and storage stability of powder microencapsulated astaxanthin

•O/W emulsions interfacial ionic membranes systems were stable.•Taguchi method was used to optimize the microencapsulation process.•Powdered astaxanthin emulsions reached an encapsulation efficiency of 96.3%.•Multilayer powdered emulsions improve astaxanthin stability during storage.
