•Making two types of WPI nanofibril-gel composites by controlling WPI aggregates.•The concentration of WP amyloid fibril and gel types affected composite properties.•Fibril led to decreasing tan δ-value and condensing structure of stranded WPI gel.•Phase separation and disordering occurred in particulate WPI gels by adding fibril.•The elastic modulus of both types of WPI gel enhanced by adding fibril.
