摘要
•HHS, acid hydrolysates of HDN, contained HTN (51.4%) and around eleven small molecular products.•HHS had better in vitro antioxidant activities than HDN in different model systems.•HHS more strongly inhibited the production of NO and pro-inflammatory cytokines in LPS-induced RAW 264.7 cells than HDN.•HHS possessed better α-glucosidase inhibitory activity than HDN.
