•Porcine hemoglobin was a better substrate for plastein than meat.•Alcalase was more effective to induce plastein formation than papain.•Hydrophobic interactions dominated the plastein reaction.•Not all but partial peptides of hydrolysates involved in plastein reaction.•The location of aggregative amino acid sequences in precursor proteins was studied.
