摘要
•W1/O emulsions stabilized solely by fat crystals were first prepared.•W1/O emulsions were dispersed in a viscous W2 phase to get W1/O/W2 emulsions.•Double emulsions were stable at 4 °C for several weeks.•No delivery of the encapsulated species was detected at 4 °C for 1 month.•Double emulsions were resistant to osmotic stress and were thermo-responsive.
