•Inactivation mechanism of OH on E. coli O157:H7 was evaluated on the protein level.•OH caused more damage to proteome of E. coli O157:H7 than WB.•Higher voltage exerted more electrical effects on proteome of E. coli O157:H7.•OH caused more damage to proteome of E. coli O157:H7 than metabolome.
