•(Xylitol or citric acid + choline chloride + water) mixtures, XoCH and CiCH, were studied.•Thermodynamic, surface, and transport properties were determined.•From NMR spectroscopy, a supramolecular structure for XoCH was found.•Quercetin solubility was remarkably increased.
