•Complete cycle of treatment of olive mill wastes has been proposed.•Two activated carbon were obtained by chemical activation of olive pomace.•Spherical beads were successfully synthetized by encapsulation of activated carbon.•Beads showed potential for polyphenols from olive mill waste water sorption.
