•We show the numerical origin of stability issues in supercritical flow simulation•It is first time that an exhaustive analysis on mixing temperature is performed•Three approaches are compared using a test-case series of increasing complexity•Conventional approaches fail to capture correct stability or mixing temperature•A new method was designed to preserve energy conservation, and resolve both issues.
